To all of you who attended the CU Healthy Living event, here is the promised Halava recipe!!! Big thanks again to the Bhakti Club for preparing it for the event!

Strawberry Vanilla Halava

Ingredients:
1 cup non-dairy margarine
2 cups sugar
2 cups sooji (farina, semolina flour, cream of wheat)
4 cups water
1 package strawberries (add as much as you like!)
1 tablespoon vanilla

In one pot, mix the sugar, water, and vanilla. Bring to a
boil. In a separate pot, melt the margarine, then add the flour. On a medium heat, roast the flour until it darkens to a golden brown, and
becomes aromatic, giving off a nutty aroma. The longer you can roast your halava without burning it the better. Add strawberries to the water and then carefully pour in the boiling water. It will start to bubble, but be brave, and stir quickly, because this is the most critical part. It’s best to use a metal whisk, but if you don’t have one just use a spoon and continue stirring the halava vigorously until it
fluffs up and pulls away from the side of the pot.

Serve immediately or keep a lid on it to prevent it
from drying out. You can save it in the fridge and reheat, adding
a little water, but it is always best fresh and hot.
